These brown varieties also boast other health benefits, including calcium citrate, which contributes to bone health, beta-carotene, and other beneficial compounds. Red seaweeds are particularly favored due to their functional qualities and ease of access, as noted by Grand View Research. Nevertheless, brown seaweeds are expected to have the second-highest compound annual growth rate from 2016 to 2024, primarily driven by the demand for alginate, a common thickening and gelling agent utilized in food and cosmetic products.
Although seaweed isn’t a staple in the American diet, it offers a distinct umami flavor. Manufacturers such as Campbell’s and Frito-Lay have incorporated umami-flavored ingredients in low-sodium and reduced-fat options to enhance the taste of otherwise bland foods. Seaweed can be seen as part of the “ocean gardens” trend, thanks to its impressive nutritional profile, vibrant colors, and unique flavors. Additionally, if certain varieties can aid in reducing specific cancerous tumors, this presents yet another selling point for U.S. consumers in search of exotic, intriguing, and health-oriented food products that include beneficial elements like calcium citrate.
