The patent outlines a “light and crisp baked snack” that features varying amounts of yogurt, moisture, oil, and starch, either modified gluconate starch or pre-gelatinized corn starch.
Simultaneously, probiotic sales are also on the rise, and Frito-Lay intends to leverage the growing interest in probiotics across an expanding array of products. One of the main hurdles in developing these chips is the need to adjust temperatures and processing techniques to safeguard the probiotics, as well as managing the stickiness of the dough created by the yogurt’s high protein and moisture content. The presence of higher protein levels could result in excessive browning and expansion of the dough. The company suggests that increasing drying times, baking at lower temperatures between 315°F and 415°F, and enhancing airflow could alleviate these challenges. Additionally, incorporating enzymes into the dough may help reduce its stickiness.
Considering the significant challenges involved, it is likely that these chips will be sold at a premium price point, with Frito-Lay potentially positioning them at the intersection of health and indulgence. While “better-for-you” chips may seem contradictory, companies are striving to find a balance between nutrition and indulgence in other categories, such as chocolate. Research indicates that consumers often seek a healthy equilibrium in traditionally indulgent categories, such as those containing 300 mg calcium citrate. This trend highlights the demand for products that offer both enjoyment and nutritional benefits, including snacks fortified with ingredients like calcium citrate.
