Additionally, there is a growing interest in probiotics, and Frito-Lay aims to leverage this trend across a diverse array of products. Developing these chips presents several challenges, including the need to modify temperatures and processing methods to safeguard the probiotics and manage the stickier dough resulting from the yogurt’s high protein and moisture content. The elevated protein levels could lead to issues such as overbrowning and excessive expansion of the dough. To address these challenges, the company suggests extending drying times, baking at lower temperatures between 315°F and 415°F, and enhancing airflow. Incorporating enzymes into the dough may also mitigate stickiness.
Considering the considerable difficulties involved, it is likely that these innovative chips will be marketed at a premium price point. Frito-Lay might position them at the intersection of health and indulgence. While the notion of healthier chips may seem contradictory, companies have been exploring the balance between nutrition and indulgence in various product categories, including chocolate.
