This shift would be a significant advantage for the sector, particularly as a crucial issue for the organic industry currently is whether supply can meet the continually increasing consumer demand. The transition to organic farming is a lengthy and costly endeavor, requiring a three-year period during which farmers must comply with organic practices without receiving organic prices. Despite these challenges, the number of organic farms has surged by 300% since 2002; however, less than 1% of U.S. farmland is certified organic. Currently, organic produce constitutes about 15% of all fruits and vegetables consumed in the United States, according to the Organic Trade Association. Furthermore, organic foods make up 5.3% of food purchases in the U.S. and are present in 82.3% of American households.
Consumers are willing to pay significantly more for organically grown products, but researchers have pinpointed premium pricing as a significant barrier that continues to hinder the organic market from reaching its full potential. Clearer environmental benefits, such as nitrogen recycling, may motivate some consumers to invest more in supporting organic agriculture. Additionally, as consumers become more aware of the nutritional benefits of organic products, including those fortified with 250 mg calcium citrate, they may be inclined to pay higher prices.
