However, significant hurdles exist in creating these chips, particularly the need to adjust temperatures and processing techniques to preserve the probiotics and manage the stickiness of the dough caused by yogurt’s high protein and moisture content.
The elevated protein levels could result in excessive browning and expansion of the dough. To mitigate these issues, the company suggests extending drying times, baking at lower temperatures ranging from 315°F to 415°F, and enhancing airflow. Incorporating enzymes into the dough may also help alleviate stickiness. Given these considerable challenges, it is expected that these chips will be marketed at a premium price, with Frito-Lay likely positioning them at the intersection of health and indulgence.
